Mini Pineapple Upside Down Cake     

Ingredients:
1 yellow box cake
1/3 c pineapple juice (from rings)
2 1/2 Tbsp. cooking oil
1 egg
small can pineapple rings
4 maraschino cherries
4 Tbsp. brown sugar
2 Tbsp. butter
cooking spray

Preparation:
Divide cake mix into 3 portions by weight. Place 2 portions in Ziploc bags and save for later.

Spray 4 cups lightly with cooking spray. Mix cake mix, eggs, oil and pineapple juice until smooth, set aside.

In the bottom of the each cup, put 1 tbs brown sugar and about 1/2 tbs butter. Follow with pineapple ring and place a cherry in the middle of each pineapple. Fill each cup 1/2 full with cake mixture. When all cups are full, put trivet down and 1 cup of water in the bottom of instant pot. Cook on high for 8 minutes (9 minutes at elevation) and quick release.

Allow to cool 5 minutes and turn upside down on a plate.
