Burritos for a Crowd
Ingredients: 1 tablespoon cooking oil
1 small onion diced
1 clove garlic, minced
1-1/2 tablespoon chili powder
1 tablespoon ground cumin
1 pound lean ground beef
1 can black beans, drained and rinsed
1 can corn kernels, drained
1 can rotel tomatoes, undrained
10 ounces beef broth (divided)
1 cup Jasmine rice
1/2 cup of chopped cilantro
Juice from 1/2 lime
Burrito Filling:
sour cream
shredded cheese
pico de gallo
guacamole
Preparation: Brown ground beef and onion in Instant Pot on sauté. Add garlic, chili powder, cumin, beans, corn, tomatoes, and broth. Stir well and let come almost to a boil. Sprinkle on the rice. Cook at high pressure for 6 minutes, natural release for 10 minutes. Stir in lime juice and cilantro. Fill burritos.
