Chicken and Rice with Mushrooms     

Ingredients:
8 ounces boneless, skinless chicken breasts
salt and pepper to taste
1 tablespoon canola oil
1 onion, peeled and minced
1 pound mushrooms, sliced thinly
1 cup long grain rice
1 cup chicken broth
1 teaspoon dried parsley

Preparation:
Turn the Instant Pot to saute, add oil. Add onions to the pan and cook until softened. Add mushrooms and cook, stirring occasionally, until lightly browned. Add rice, broth, dried parsley, and about 1 teaspoon salt. Stir to distribute. Season chicken with salt and pepper to taste. Arrange chicken breasts in a single layer on top of the rice mixture. Press cancel button. Set at high pressure and cook 5 minutes. Natural release 10 minutes, then quick release. Shred the chicken with two forks and gently fluff the rice to distribute. Serve hot.
