Ham & Potato Soup
Ingredients: 1 tsp Olive Oil
1 cup Chopped Ham
1 Medium Red Onion chopped
4 cups Potatoes cubed
2 cups chicken broth
1 tsp salt
1/2 tsp black pepper
1/2 tsp. thyme
1 lb. Velveeta
Preparation: Sauté onions and ham in Instant Pot for 2-3 minutes. Add in potatoes, chicken broth, and seasonings. Close Instant Pot and set to sealing. Cook on high pressure for 7 minutes, quick release. Stir in Velveeta.
