Hummus     

Ingredients:
1 cup chickpeas
2 cups water

1 Tbsp. olive oil
2 Tbsp. tahini
2 Tbsp. lemon juice
2 cloves garlic, peeled
1 Tbsp. salt
1/4 tsp. cayenne pepper

Preparation:
Add chickpeas and water to Instant Pot. Cook on high pressure 40 minutes (48 at altitude), natural release. Allow to cool.

Drain chickpeas, reserve water. Add chickpeas to food processor with all remaining ingredients. Process until smooth. Adjust seasoning to taste. Add cooking water if necessary.
