Apple Pie Enchiladas
Ingredients: 21 oz. can apple pie filling
1 tsp. ground cinnamon
1/2 cup butter
1/2 cup sugar
1/2 cup brown sugar
1/2 cup water
1 tsp. vanilla
6 flour tortillas
Preparation: Spoon heaping 1/4 cup pie filling evenly down the center of each tortilla. Roll up, tucking in ends, place seam side down in 9x13 pan.
Combine butter, sugar, brown sugar, and water in a saucepan over medium heat. Bring to a boil, stirring constantly. Reduce heat and simmer 3 minutes. Remove from heat and stir in vanilla. Pour sauce over enchiladas and let stand 45 minutes.
Bake in a preheated oven at 350 degrees for 30 minutes.
