Coconut Thai Curry
Ingredients: 4 chicken breasts
5 cloves garlic
500 grams coconut milk full fat
3 Tbsp Thai green curry paste
1 lime juiced
12 oz snow peas
Preparation: Place chicken in Instant Pot. Add garlic, coconut milk, and green curry paste. Stir. Cook on high pressure 16 minutes, quick release.
Remove chicken and shred. Turn IP to sauté, add lime juice and cook until slightly thickened. Stir in shredded chicken and snow peas, cook until peas are softened. Serve over rice.
