Greek Roasted Leg of Lamb
Ingredients: 5-6 lb bone in lamb leg roast
10 cloves garlic, sliced in half
2 Tbsp. olive oil
1 Tbsp. sea salt
1/2 tsp. pepper
4 sprigs fresh rosemary
4 sprigs fresh oregano
4 sprigs fresh thyme
1/2 cup lemon juice
1 cup white wine
1 cup chicken broth
Preparation: Preheat oven to 450 degrees. Make 20 slits in the skin of the lamb roast and insert garlic clove halves. Run the leg with the olive oil, then liberally season with salt and pepper.
Place the roast in a large Dutch oven, bake uncovered at 450 degrees for 30 minutes. Add thyme, rosemary, oregano, lemon juice, wine and broth. Cover and bake at 350 degrees for 3 hours. If liquids dry up, add more broth as needed.
Remove cover, bake for additional 30 minutes at 350 degrees or until top is browned.
