Coconut Raspberry Ice Cream
Ingredients: 2 cans coconut milk
3/4 cup sugar
1 tsp. vanilla
12 oz raspberries, fresh or frozen
Preparation: For best results, place cans of coconut milk in the fridge for a few hours. Place all ingredients in a blender, blend until combined. Freeze in ice cream maker according to manufacturer's directions. If you prefer, you can leave raspberries out until the last few minutes of churning and then add.
