Southwestern Chicken Salad with Chili Lime Dressing
Ingredients: Marinade/Dressing:
2 medium chicken breasts
2 Tbsp olive oil
1/3 cup lime juice
4 Tbsp. cilantro
2 cloves garlic
1 tsp. brown sugar
1/2 tsp. red chili flakes
1/4 tsp. ground cumin
1 tsp. salt
1/4 cup plain Greek yogurt
Salad:
2 cups romaine lettuce chopped
1 ripe avocado, sliced
grape tomatoes, halved
1/2 cup black beans rinsed
1/2 cup corn rinsed
red onion, diced
crumbled queso fresco
1/4 cup cilantro for topping
Preparation: Pulse marinade ingredients, except yogurt, together in food processor until blended. Pour half the marinade into a shallow dish to marinade the chicken for two hours. Refrigerate the reserved marinade to use as the dressing.
Grill chicken until cooked through. Slice chicken into strips and prepare salad with leaves, tomatoes, avocado slices, black beans, corn and chicken.
Combine remaining marinade/dressing with yogurt; mix well to combine. Drizzle the creamy dressing over the salad; divide into 4 bowls and serve.
