Honey Rum Baked Beans     

Ingredients:
3 cans black beans or 1/2 lb dried black beans
1⁄4 lb chorizo or breakfast sausage, coarsely diced
1/2 small Spanish onion, diced fine
1 tablespoons minced garlic
1/2 medium carrot, peeled and diced fine
1/2 cup dark rum
2 Tbsp honey
2 Tbsp. minced green chiles
salt and pepper
1 1/2 cups chicken stock
coarsely chopped cilantro

Preparation:
Preheat oven to 300 degrees F.

Brown sausage over medium high heat. Remove the sausage from the pan and pour off all but 3 tablespoons of the fat. Add the onion, garlic, and carrot and sweat until the onion is translucent and tender, about 4 minutes.

Combine all ingredients except cilantro in Dutch oven. Bake, covered, 20 minutes. Check to see if the mixture is dry and add water or stock if needed. Continue baking, covered, another 25 minutes. Uncover and bake an additional 15 minutes. Remove from the oven and fold in the cilantro.

Instant Pot preparation:
Rinse and drain dried beans. Set Instant Pot to saute, brown the sausage. Remove the sausage and stir in onions, garlic, and carrot. Cook until onion is translucent. Add remaining ingredients except cilantro. Cook on high pressure 35 minutes, natural release 10 minutes, then quick release. Stir in cilantro.
