Ginger-Soy Mahi     

Ingredients:
6 tablespoons mirin
4 tablespoons water
4 tablespoons soy sauce
2 tablespoon rice wine vinegar
4 teaspoons minced ginger
Cooking spray
3 frozen mahi mahi fillets, or other firm fish
1 teaspoon sesame oil
1 scallion, thinly sliced
prepared rice, to serve

Preparation:
Stir mirin, water, soy sauce, vinegar and ginger in the Instant Pot. Lightly grease the trivet with cooking spray, set the frozen fillets on the trivet. Do not overlap fish. If fish fillets are 1/2 inch thick or less, cook on high pressure 2 minutes. If fillets are over 1/2 inch, cook on high pressure 3 minutes. Quick release. Lift the rack with the fish out, cover loosely with foil to keep warm.

Set Instant Pot to saute and boil the liquid until it's reduced by half, about 3 minutes. Stir in the sesame oil. Pour glaze over fish fillets, garnish with scallion greens. Serve with rice.
