Margarita Tart
Ingredients: Shortbread Crust:
8 Tbsp. butter, softened
1/4 cup sugar
1 cup flour
1/2 tsp. salt
1/2 tsp. vanilla extract
Lime Filling:
3 large eggs
1 1/2 cups sugar
1/2 cup lime juice, fresh
1/2 cup flour
3 limes for testing
Flaky sea salt
Confectioner sugar
Preparation: Cream butter and sugar, add flour, salt, and vanilla extract until just blended. Shape into flat disc. Press into 4"x14" tart pan, 8" or 9" pie or tart pan, going up sides of pan. Pierce bottom with fork, chill one hour. Bake in 350 degree oven for 20 minutes until slightly brown. Cool completely before adding filling.
In mixer combine eggs, sugar, lime juice, flour, zest of two limes. Pour into cooled crust. Bake in 350 degree oven for 25-30 minutes until feels set when gently touched in middle. Cool completely. Shower with flaky sea salt, powdered sugar, and lime zest.
