Chicken with Roasted Vegetables
Ingredients: 5 Tbsp olive oil, divided
1 1/2 pounds fresh broccoli florets
1 1/2 pounds carrots, cut into 1 inch chunks
1 Tbsp Ranch dressing mix
2 pounds bone in thighs
2 cloves garlic, minced
Preparation: Preheat oven to 400 degrees. Lightly coat a baking sheet with olive oil.
Toss the vegetables with 2 tablespoons olive oil, salt & pepper to taste and 1 teaspoon Ranch seasoning. Mix until well coated. Season chicken thighs on both sides with remaining Ranch seasoning.
Scatter the vegetables on the sheet pan and place chicken thighs on top. Drizzle with remaining olive oil and sprinkle with garlic. Roast about 30 minutes, stirring vegetables halfway through.
