Corn Chowder Salad
Ingredients: 1 package brats or other flavorful sausage, sliced
1 lb baby Red Potatoes, sliced thick
2 ears Corn
1 Jalapeno, diced
2-3 Green Onions, chopped
1 tbsp fresh Cilantro
1/2 tsp Black Pepper
1 tbsp Salt
FOR THE DRESSING:
1/4 cup Olive Oil
2 tbsp Red Wine Vinegar
1 Garlic Clove, grated
1 tbsp Dijon Mustard
Salt and Black Pepper, to taste
Preparation: Bring a large pot of water to the boil and season with salt. Boil potatoes 5-7 minutes, remove from pot and set aside. Add corn to boiling water, boil 5 minutes. Cut kernels off cobs and set aside.
In a sauté pan cook the sliced sausages until done.
Combine all ingredients for the dressing and shake well.
In a medium bowl combine potatoes, corn, sausage, and jalapeno. Pour dressing and toss to combine. Garnish with fresh cilantro and scallions.
