Onion Jam
Ingredients: 2 Tbsp grapeseed or avocado oil
4 medium white or yellow onions
1 Tsp kosher salt
1/3 cup apple cider vinegar
1/2 cup brown sugar
Preparation: Place a large saucepan over medium-low heat. Add oil, onions and salt.
Gently cook onions, stirring often to keep them from burning. Continue cooking until they are a light brown color, about 20‑25 minutes.
Add cider vinegar and brown sugar. Reduce heat and cook an additional 10-15 minutes, or until mixture is thick and onions have turned a dark brown color.
Completely cool before serving. Place a small bowl on a cheeseboard for topping crackers and crostini. Jam will keep up to two weeks in the refrigerator.
