Sausage Dressing     

Ingredients:
1 pound pork sausage
1/2 cup butter
1 large onion, chopped
4 celery ribs, chopped
2 tsp rubbed sage
1 tsp chopped rosemary
1/4 cup chopped fresh parsley
1 tsp salt
8 cups stuffing cubes
1 can (14-1/2 ounces) chicken broth

Preparation:
In a large Dutch oven, melt butter over medium-high heat. Add sausage, breaking up into fine pieces. Cook, stirring frequently, until only a few bits of pink remain, about 8 minutes. Add onion, celery, sage, salt, and rosemary and cook, stirring frequently, until vegetables are softened, about 10 minutes. Remove from heat and add half of chicken stock. Stir in parsley and 1/3 of the bread cubes. Transfer mixture to a large bowl. Add remaining bread cubes, mix well. Add chicken broth until moist but not soggy.

Preheat the oven to 350 degrees F and butter 9x13 baking dish. Place stuffing mixture in the prepared dish and cover. Bake in the preheated oven about 45 minutes. Remove foil and continue baking until golden brown and crisp on top, 15 to 20 minutes longer.
