Cajun Jalapeno Corn Pudding
Ingredients: 1 lb. frozen corn
2 Tbsp. salted butter
1/4 cup red onion, diced
1 jalapeno, diced
2 Tbsp. flour
1 Tbsp. sugar
1 tsp. salt
12 oz. heavy cream
3/4 cup pepper jack cheese
Preparation: Cook corn according to package instructions, drain liquid. Set aside.
In a large skillet, melt butter over medium-low heat. Add onions and jalapeno and cook until softened. Remove from heat and stir in flour to make a paste. Add corn, sugar, and salt; stir well.
Place back on heat on medium-low and gradually add cream. Cook until it starts to thicken. Add the cheese gradually.
