Chile Radish Salsa
Ingredients: 1 serrano pepper
2 jalapeno peppers
1 anaheim pepper
1 large clove garlic
1 cup radishes, finely chopped
1 cup cucumber, seeded and finely chopped
5 scallions, finely chopped
2 cups tomatoes, finely diced and drained
3 Tbsp. fresh lime juice
3 Tbsp. olive oil
1/2 cup cilantro, chopped
salt to taste
Preparation: Roast, peel, and finely chop all peppers. Combine all ingredients and refrigerate 1 hour. Drain off excess liquid before serving.
