Irish Scones
Ingredients: 2 1/2 cups flour
1 Tbsp. baking powder
1/4 cup sugar
1 tsp. salt
10 Tbsp. butter, diced into small chunks
1/2 cup buttermilk
1 egg
Preparation: Preheat the oven to 425 degrees. Line a baking sheet with parchment paper.
In a large bowl, whisk dry ingredients together. With your hands, rub the butter in the flour until it's about half the size of a walnut. With a fork, mix the egg in the buttermilk. Create a well in the middle of the flour mixture, slowly mix in buttermilk until you have a soft dough.
Place the dough on a floured surface and knead a couple of times. Roll out to around 1 inch thick and cut with a round cutter. Place rounds on baking sheet. Brush with melted butter. Bake 15-20 minutes or until the scones are golden.
