Mini Blueberry Lemon Muffins
Ingredients: 1 cup all-purpose flour
1 cup old-fashioned oats
¼ cup granulated sugar
1 ½ teaspoons baking powder
½ teaspoon ground cinnamon
¼ teaspoon salt
2 large eggs, at room temperature
½ cup milk, at room temperature
¼ cup canola oil
1 teaspoon pure vanilla extract
Zest of 1 lemon (about 1 teaspoon)
1 cup fresh blueberries
Preparation: Preheat oven to 350°F and lightly coat a mini muffin tin with cooking spray.
In a medium bowl, whisk flour, oats, sugar, baking powder, cinnamon, and salt; set aside.
In a large bowl, whisk eggs, milk, oil, vanilla extract, and lemon zest until blended. Add dry ingredients and stir until just combined. Gently fold in blueberries. Fill each mini muffin cup with 1 rounded tablespoon of batter; makes 20 muffins.
Bake 15 minutes on the center rack or until toothpick inserted into the center comes out clean. Cool completely on wire rack before storing.
