Sauteed Kale with Mushrooms and Bacon     

Ingredients:
1 slice bacon, chopped
1/2 cup sliced shallots
4 oz. sliced mixed mushrooms
1 bunch torn kale leaves
2 Tbsp. water
1/2 tsp. salt
1/2 tsp. pepper

Preparation:
Cook bacon in large skillet over medium heat 5 minutes. Add shallots, cook and stir 3 minutes. Add mushrooms, cook and stir 8 minutes. Add kale & water; cover and cook 5 minutes. Uncover and cook 5 minutes, stirring occasionally. Season with salt & pepper.
