Farro Salad     

Ingredients:
1 cup pearled farro
3 cups water
1/2 tsp. salt
Mixed greens
Sweet potato, roasted
Artichoke hearts
Mushrooms, roasted
Grape tomatoes, halved
Parmesan
Lemon herb vinaigrette

Preparation:
Add farro, water and salt to Instant Pot. Cook on high pressure 12 minutes, natural release 5 minutes. Drain excess water.

Preheat oven to 425 degrees. Place sweet potato chunks on parchment lined sheet pan, drizzle with olive oil and sprinkle with salt. Toss to combine. Roast in oven. Meanwhile, cut larger mushrooms into smaller pieces, drizzle with olive oil and a little salt. Toss to combine. After sweet potatoes have cooked 20 minutes, add mushrooms to pan. Roast another 15-18 minutes.
