Crawfish Sauce     

Ingredients:
4 Tbsp. butter
1/4 cup flour
1/2 cup onion, chopped
1/4 cup bell pepper, chopped
1/4 cup celery, chopped
1/4 cup dry white wine
1 Tbsp seafood base dissolved in 1 cup water
pinch dried thyme
1 bay leaf
1 clove garlic, minced
1 1/2 cups crawfish tails
1/2 cup tomatoes, diced
1 Tbsp. flatleaf parsley, chopped
1/3 cup green onions, sliced
1/4 tsp. salt
1 tsp. Cajun seasoning
1 cup pepper jack cheese, shredded

Preparation:
In a large saucepan, melt the butter until bubbling. Add flour gradually and stir constantly over medium-high heat to make a light brown roux. Lower heat to medium and add onion, bell pepper, and celery. Cook until the vegetables are softened, stirring constantly.

Add wine, seafood stock, thyme, bay leaf, and garlic; bring to a boil. Simmer 2-3 minutes, until thickened.

Add crawfish tails, tomatoes, parsley, and green onions. Simmer 8-10 minutes until sauce can be picked up with a fork. Adjust seasonings with salt and Cajun seasoning. Stir in pepper jack cheese.

Serve over pasta, grilled fish or chicken, or cheese enchiladas.
