Pinchos Morunos
Ingredients: 1/2 lb pork loin
1/2 tsp. ground cumin
1/4 tsp. ground coriander
1/2 tsp. ground oregano
1/2 tsp. smoked paprika
1/4 tsp. turmeric
1/4 tsp. ground fennel seed
pinch cinnamon
pinch salt
pinch allspice
1 Tbsp. olive oil
1 Tbsp. lemon juice
1 clove garlic, grated
pinch ground black pepper
skewers
Preparation: Cut pork in large bite size pieces. Mix all remaining ingredients into a paste, massage into pork. Let marinade for a few hours or overnight. Presoak skewers.
Thread pork onto skewers, grill to 145 degrees.
