Doug's Black Eyed Peas
Ingredients: 1 pound dry Black Eyed Peas: Soak peas per package directions.
Vegetables:
Cajun trinity(1 cup each):
1 onion
2 green bell pepper
4 celery stalks
Meats:
1 pound Breakfast Sausage
1 pound Smoked Sausage
1 pound Ham Steak with bone
2 Smoked Ham Hocks
Aromatics:
4 cloves garlic
2 bay leaves
Spices:
2-4 Tbsp Cajun spices (to taste)
Salt and pepper (to taste)
Butter: For sauteing
Preparation: Prepare the Peas: Soak the peas according to the package instructions.
Dice the Vegetables: Dice the onion, green bell pepper, and celery.
Cook the Breakfast Sausage: Brown the breakfast sausage in a skillet over medium heat. Once cooked, remove it from the skillet and set aside.
Saute the Trinity: In the same skillet, melt butter over medium heat. Add diced onion, green pepper, and celery (the "trinity"). Saute until softened. Add minced garlic and continue to saute until fragrant.
Combine Ingredients: In a slow cooker, combine the peas, browned breakfast sausage, sliced smoked sausage, ham steak, ham hocks, sautéed vegetables, bay leaves, garlic, Cajun spices, and salt and pepper.
Add Water: Cover the mixture with water, ensuring enough liquid to fully cover the ingredients.
Cook: Cover the slow cooker and set it to low heat. Cook for 6-8 hours or until the peas are tender and the flavors have melded.
Serve: Once cooked, remove the bay leaves, ham steak, and ham hocks. Remove any bones, break apart the meat into bite-size pieces, and add back to the slow cooker. Stir well and adjust the seasoning if necessary. Serve hot.
