Korean Cucumber Banchan
Ingredients: 1/2 cup English cucumber, thinly sliced
Pinch salt
1/2 Tbsp. rice vinegar
1/2 Tbsp. mirin
1 green onion, sliced thin
1 clove garlic, finely minced
1/2 tsp. sesame seed
Preparation: Slice the cucumber and place it in a medium bowl. In another bowl, mash garlic with salt to form a paste. Stir garlic, mirin, and rice vinegar into cucumber. Allow to marinate for 15 minutes. Stir in green onion and top with sesame seeds.
