Mediterranean Cottage Cheese Cups     

Ingredients:
2 cups cottage cheese
3⁄4 cup cucumbers, seeded and chopped
3⁄4 cup cherry tomatoes, chopped
1⁄2 cup sliced kalamata olives
Pinch fresh dill, chives or basil, chopped

Preparation:
In each of 4 half-pint Mason jars or Stanley lunch container, add ½ cup cottage cheese. Top with cucumbers, tomatoes, kalamata olives and herbs, as desired. Refrigerate until ready to eat, up to 3 days. Great snack or light lunch.
