Mango Avocado Salad with Turkey Patties
Ingredients:
Mango Salad:
6 cups mixed lettuce
1 mango, peeled and cut into long thin slices
1 just ripe avocado, peeled and cubed
1/2 small red onion, thinly sliced
1 TBSP lime juice
3/4 cup warm water
dash of salt
Vinaigrette:
1 TBSP fresh ginger, grated
1 clove garlic, minced
3 TBSP fresh lime juice (about 1–2 small limes)
3 TBSP olive oil
1/4 cup cilantro, finely chopped
1/2 tsp salt
Turkey Burgers:
1 lb ground turkey
3 cloves garlic
1 small yellow onion
1 stalk celery
1 carrot
3–4 cremini or button mushrooms
1/4 cup fresh cilantro
1/4 cup fresh basil
2 TBSP soy sauce
1 TBSP coconut or almond flour
1 TBSP olive oil
1.5 tsp sea salt
Preparation:
Preheat grill to medium or oven to 400 F. Prepare burger vegetables using a food processor. In a large bowl combine turkey, garlic, onion, celery, carrot, mushrooms, cilantro, basil, soy sauce, coconut flour, olive oil and sea salt. Mix well and using hands, form into 6 patties. Grill burgers, with the lid closed, turning once for 10-12 minutes.
Meanwhile, place sliced red onions in a small bowl. Add the warm water with a dash of salt and 1 TBSP lime juice. Let soak for about 10 minutes. After 10 minutes, drain the onion slices.
In a salad bowl, combine lettuce, mango, avocado and red onion.
Combine all vinaigrette ingredients in a small jar/bottle. Cover and shake until the ingredients are well mixed. Dress salad and serve immediately with turkey burgers.
