Mediterranean Lemon Dill Chicken Bowls     

Ingredients:
1 lb boneless, skinless chicken breasts
1 cup quinoa or shredded cabbage
1 cucumber, diced
1 pint cherry tomatoes, halved
1/2 red onion, thinly sliced
1/2 cup Kalamata olives, pitted
1/4 cup crumbled feta cheese
2 lemons, divided, juiced
1/4 cup fresh dill, chopped
1 cup plain Greek yogurt
4 tbsp olive oil
Salt, pepper, and oregano to taste

Preparation:
Mix chicken, olive oil, juice from one lemon, oregano, salt, and pepper in a bowl. Let it sit for 30 minutes.

Rinse quinoa and cook according to package directions.

Grill chicken over medium heat. Cool slightly, then slice.

Meanwhile, dice cucumber, halve tomatoes, and slice onion.

Combine Greek yogurt, juice from one lemon, dill, salt, and pepper in a bowl.

Divide quinoa, chicken, veggies, and olives among bowls. Add feta. Top with yogurt sauce.
