Wynona's Cucumber and Fennel Salad
Ingredients: 2 to 3 tablespoons rice wine vinegar
1 1/2 teaspoons agave or honey
1 teaspoon Dijon mustard
Juice of 1 lime
Kosher salt and freshly ground black pepper
5 small radishes, diced
1 medium bulb fennel, tough outer layers removed, thinly sliced crosswise, fronds chopped for garnish
1 medium shallot, sliced thinly with the grain
1 English cucumber
2 to 3 tablespoons orange olive oil or regular olive oil
1 Granny Smith apple, cut into matchsticks
1/2 cup fresh cilantro leaves
1/2 cup fresh mint leaves, torn
2 teaspoons chili crisp
Preparation: Whisk together the vinegar, agave, Dijon and lime juice in a mason jar or bowl and season with plenty of salt and pepper. Add the radishes, fennel and shallot. Toss the vegetables in the vinaigrette. Chop the cucumber, then add it. Drizzle in the olive oil and whisk to emulsify or shake if using a mason jar.
Add the apple and toss to combine. Taste for seasoning and transfer to a platter or serving bowl. Top with the fennel fronds, cilantro leaves and torn mint. Drizzle with the chili crisp and serve.
