Greek Lemon Rice Pilaf
Ingredients: 2 cups long grain white rice
Extra virgin olive oil
1 medium onion, minced
2 garlic cloves, minced
1/2 cup orzo
Zest from 1 lemon
Juice from 2 lemons
2 cups chicken stock
salt
1 large handful parsley, chopped
1 Tbsp. fresh dill
Preparation: Wash rice well and soak for 15 minutes in cold water; drain well.
Heat 3 Tbsp olive oil in a large saucepan until oil is shimmering but not smoking. Add onions and cook for 3-4 minutes until translucent. Add garlic and orzo and cook until orzo gains some color. Stir in rice, toss to coat.
Cook until rice smells nutty. Add lemon juice and chicken stock. Bring liquid to a boil then turn heat to low. Cover and cook 20 minutes without lifting lid.
When ready to serve, uncover and stir in parsley, dill, and lemon zest.
