Roast Beef and Gorgonzola Hoagies     

Ingredients:
Hoagie rolls
1 whole head garlic
1/4 cup Oil
2 tablespoons Butter
1 3/4 cups beef broth
1 1/2 lb cooked roast beef, thinly sliced
roasted peppers
1 cup mayonnaise
roasted garlic
1/2 teaspoon Black Pepper
1 cup crumbled Gorgonzola cheese (4 oz)
tomato, sliced
romaine
red onion, sliced

Preparation:
Preheat air fryer to 380 degrees. Cut the top off the head of garlic and place on a square piece of aluminum foil. Bring the foil up and around garlic. Pour olive oil on top and season with salt and pepper. Close ends of foil over garlic, creating a pouch. Air fry until garlic is soft, 16 to 20 minutes. Set aside to cool, then squeeze out the soft cloves.

Preheat oven to broil. In a large skillet, heat oil and butter over medium heat. Stir in broth and beef; cook 4 minutes. Remove from heat.

In small bowl, mix mayonnaise, roasted garlic and pepper.

Cut each roll in half horizontally, cutting to but not completely through; place cut sides up on cookie sheet. Spread mayonnaise mixture over cut sides of each roll. Using slotted spoon, remove beef from broth mixture. Top each loaf with beef and roasted peppers; top with cheese. Broil with tops 6 inches from heat 2 to 3 minutes or until bread is lightly toasted.

Top with tomato, romaine, and red onion.

Note to roast garlic in oven - Preheat oven to 400 degrees. Cut the top off the head of garlic to expose top of the garlic cloves. Remove any loose papery outer layers. Place garlic cut side up on a square of foil. Drizzle oil on exposed surface of garlic. Wrap the sides up and place the foil wrapped garlic on a baking tray. Roast until golden and soft, 45-60 minutes.
