Italian Chicken Parmesan
Ingredients: 4 skinless boneless chicken breasts
2 14 oz can tomatoes
4 Tbsp cornstarch
1/2 tsp oregano
1/2 tsp basil
1/2 cup parmesan cheese
cooked fettucine
Preparation: Preheat oven to 425. Rinse chicken & pat dry; cut into bite size pieces. Place in 13x9 inch baking dish. Bake, covered, for 15 minutes; drain.
Meanwhile, combine tomatoes, cornstarch, oregano & basil in saucepan. Cook until thickened, stirring constantly. Pour sauce over chicken; top with cheese. Bake for 10 minutes or until chicken is tender.
