Roasted Potatoes     

Ingredients:
1 1/2 lbs. Yukon Gold potatoes, cut into wedges
1 Tbsp. olive oil
1 Tbsp. minced fresh rosemary
1 tsp. dried thyme
1 tsp. dried oregano
1/2 tsp. salt
1/4 tsp. pepper

Preparation:
In a large bowl, toss potatoes with oil. Combine the seasonings; sprinkle over potatoes and toss to coat. Arrange in a single layer in a 15x10 inch pan coated with nonstick cooking spray. Bake at 425 degree oven for 40-45 minutes or until tender, stirring once.
