Beef Jerky     

Ingredients:
1/3 cup soy sauce
1/4 cup lemon juice
1/4 tsp liquid smoke
1/4 tsp pepper

Preparation:
Combine ingredients for 1 pound of meat. Cut off all fat. Cut meat into strips, against grain & only 1/8-1/4 inch thick. Completely coat meat & marinate for 15 minutes. Use upper rack in oven & only one rack. Stick toothpicks through 2 slices of meat & hang on oven rack. Place foil in bottom of oven to catch drippings; remove after the first hour. Set oven on lowest temperature setting. Let dry for about 10 hours.
