Doug's White Bean Soup     

Ingredients:
1 lb navy beans
3/4 cup onions
1/4 celery
1 Tbsp garlic, minced
1 lb smoked sausage
2 qts chicken stock
2 Tbsp parsley
2 tsp salt
1 tsp black pepper
5 dashes pepper sauce

Preparation:
In a 4 quart pot, cover beans with about 2 quarts water. Stir well, and let stand for 2 hours. Next, chop vegetables and slice sausage to desired thickness. Pour out water and cover beans with at least 2 quarts chicken stock. Place on high heat and bring to boil for 30 minutes. Add remaining ingredients except for sausage. Stir well. Boil on high for 1 hour, stirring occasionally, adding liquid to maintain desired texture. Add sausage and simmer for 45 minutes covered. Serves 10-12.
