Almond Meal Blueberry Pancakes     

Ingredients:
2 cups almond meal
1/2 cup finely shredded unsweetened coconut
3 eggs
1 cup coconut milk
1 apple, grated
1 cup fresh or frozen blueberries, plus more for serving
3 Tbsp cinnamon

Preparation:
Mix all ingredients together. Using 1/4 cup scoops, cook the pancakes on a hot griddle greased with coconut oil. Cook about 4 minutes per side, making sure the pancakes are brown and crisp before flipping. Serve with additional blueberries on top.
