Jiffy Corn Casserole
Ingredients: 1 can cream corn
1 can whole corn, drain 1/2 liquid off
2 eggs, beaten
3/4 stick melted butter
8 oz. sour cream
1 box Jiffy cornbread mix
1 cup shredded cheddar cheese
1 can green chiles (optional)
Preparation: Mix all ingredients together. Bake in slightly oiled 9x13 pan at 325 degrees for 30 minutes or until firm.
Or pour in small oiled bundt pan. Pour 2 cups of water in Instant Pot, place trivet inside. Cook on high pressure 45 minutes, natural release.
