Shepherd’s Pie
Ingredients: 2 cups mashed potatoes
1 cup shredded cheddar cheese
2 cloves garlic, minced
1 medium onion
1 pound ground lamb
1/4 cup red wine
1 tablespoon dried rosemary
1 tablespoon dried thyme
Salt and pepper
4 cups frozen mixed vegetables (peas, carrots, corn and green beans), thawed
1 cup beef gravy
Preparation: Preheat oven to 375 degrees. Mix potatoes, cheddar and 1 clove garlic until blended. Brown onion, 1 clove garlic, and meat in large skillet; drain. Stir in red wine and seasonings, simmer for one minute. Combine meat, vegetables and gravy; spoon into 9-inch square baking dish. Cover with potato mixture. Bake 20 min. or until heated through.
