Campfire Trout
Ingredients: 2 whole trout
1 small onion, cut into 6 wedges
2 Tbsp. snipped fresh sorrel
2 tsp. butter
1/4 tsp. salt
1/4 tsp. pepper
4-6 large fresh sorrel leaves
Preparation: Build a campfire and allow it to burn down to glowing coals. Cut two 18x14 inch sheets of heavy duty foil. Place 1 trout in center of each sheet. Stuff each fish evenly with onion, snipped sorrel, and butter. Sprinkle cavity of each fish with salt and pepper. Wrap body of each fish with sorrel leaves, leaving tail exposed. Fold long sides of foil together in locked folds. Fold and crimp short ends; seal tightly. Place packets directly on coals. Cook for 4 minutes. Turn packets over. Cook 4-6 minutes longer, or until fish begins to flake when fork is inserted at backbone in thickest part of fish.
