Olive Pesto
Ingredients: 3/4 cup Kalamata Olives, pitted
1/2 cup fresh parsley
1 cup fresh Basil leaves
2 shallots, peeled
2 garlic cloves, peeled
1 cup extra virgin olive oil
1/4 cup Parmesan cheese
1/4 tsp. pepper
Preparation: Combine all ingredients in a blender or food processor, blend thoroughly.
