Tomato Boullion     

Ingredients:
Tomato Skins

Preparation:
When canning tomatoes, save the skins. Transfer them to a colander to remove as much liquid as possible. Dry skin side down on trays lightly sprayed with cooking spray. Once thoroughly dry, process in blender or food processor until ground to a fine powder. Store in a sealed jar or ziplock bag. Refrigeration is not necessary as long as the powder stays dry.

Mix even amounts of powdered tomato and water to make your own tomato paste. Thin further for an approximation of tomato sauce. Add the powder to soups, stews, eggs and casseroles to get a tomato flavor when actual tomatoes are not needed.
