Pesto Chicken Pastries     

Ingredients:
1-1/2 cups (6 oz.) Shredded Mozzarella Cheese
1-1/4 cups finely chopped cooked chicken
1/4 cup pesto sauce
2 Tbsp. finely chopped drained sun-dried tomatoes in oil
1 can (17 oz.) refrigerated extra-large buttermilk biscuits
1/4 cup (1 oz.) Shredded Parmesan Cheese

Preparation:
Combine Mozzarella cheese, chicken, pesto sauce and tomatoes in medium bowl. Roll or pat each biscuit into a 5-inch round. Place a heaping 1/4 cup cheese mixture over center of each round. Bring up sides over filling and pinch to seal. Roll and press top side of pastries in Parmesan cheese; place seam-side down on baking sheet. Bake in preheated 375°F oven 15 minutes or until golden brown. Serve warm or at room temperature.
