Cajun Drumettes
Ingredients: 24 chicken wings
1 tsp. salt
1 Tbsp. pepper
3 cups flour
1 cup corn flour
2 Tbsp. Cajun seasoning
1/2 cup mayonnaise
2 Tbsp. sour cream
2 Tbsp. creole mustard
1 Tbsp. Worcestershire sauce
2 cups buttermilk
1/2 tsp. cream of tartar
1 Tbsp. parsley flakes
oil for frying
Preparation: Pat wings dry and sprinkle with salt and pepper. Mix flour, corn flour and Cajun seasoning together. In a separate bowl, whisk together mayonnaise, sour cream, creole mustard, Worcestershire sauce, buttermilk, cream of tartar and parsley flakes until completely blended.
Heat oil to 360 degrees for frying. Dredge chicken pieces in the dry mix until lightly coated, shake off all excess. Dip chicken parts into the wet mixture until richly coated and then into the dry mixture again until there are no wet spots on the chicken. Carefully drop the coated pieces into the hot oil and fry until golden brown, about 10-12 minutes.
