Smoked Poultry
Ingredients: Poultry of choice; chicken, game hens, turkey
Poultry Brine
Poultry Rub
Apples
Preparation: Brine poultry overnight
Drain brine and pat dry
Stuff quartered apples in poultry cavity
Spray with cooking oil
Apply favorite poultry rub
Smoke, 75% apple and 25% hickory
Smoke at 275 degrees to an internal temperature of 165 degrees
For a crispier skin, increase smoke temperature to 325 degrees for the last 20-25 minutes(When internal temperature reaches 140 degrees)
Smoke time is about 3.5 to 5 hours, smoke to temp not time.
