Sausage Hash     

Ingredients:
1 Pound breakfast sausage
1 Tablespoon vegetable oil
1 yellow onion, diced
1 green bell pepper, diced
1 red bell pepper, diced
3 Cups par-cooked diced potatoes
1 Tablespoon paprika
Salt and pepper, to taste

Preparation:
In a large skillet, cook the sausage over medium-high heat until no longer pink. Drain some fat from the pan and add the onion and bell peppers. Continue to cook, stirring, until the onions and peppers are softened, about 2 minutes. Add the potatoes and paprika, toss well, and let the hash cook undisturbed but stirring from time to time, until the potatoes are evenly golden brown, about 8 minutes.
