Grandpa Dan's Date Pinwheel Cookies     

Ingredients:
FILLING:
1 lb chopped dates
1/2 cup water
1/2 cup sugar
1 cup chopped nuts

DOUGH:
1 cup shortening
1 cup brown sugar
1 cup sugar
1 tsp salt
3 eggs
1 tsp baking soda
1 tsp vanilla
4 cups flour

Preparation:
In saucepan, combine dates, water & sugar; simmer until thickened. Add nuts & set aside to cool. Mix all dough ingredients together. Divide into 2 parts. Roll thin; spread date mixture over. Roll jelly roll style & chill in freezer. Slice & bake at 350 for 10 minutes or until brown.
