Ed's Overnight Smoked Brisket     

Ingredients:
7 lbs Brisket
Favorite Rub

Preparation:
5pm - Rub brisket and let rest for a minimum of 5hrs - use your favorite rub.

11pm - Put in smoker @ 185, be sure hopper is full, use Cherry(or other favorite fruit pellet)

5am - Check hopper and refill, can be varied to your preference, but DO NOT let hopper run empty!!

1pm - Turn up to 225, check hopper and refill as needed

3pm - Pull meat from smoker, wrap in foil and towels, put meat in an empty cooler

5pm - Pull meat from Cooler and ENJOY!
