Doug's Red Beans & Rice
Ingredients: 1 pound red beans
4 cups water or chicken broth
onion
green pepper
celery
1 lb. breakfast sausage
1 lb. ham
1 lb. smoked sausage
2 ham hocks
2 dashes hot sauce
3 bay leaves
1 tsp. thyme
Cajun seasoning
Rice, prepared
Preparation: Wash beans well, then drain. In a large bowl, cover beans with 3" water. Allow beans to soak overnight.
Alternative: combine beans and broth in Instant Pot. Pressure cook on high for 28 minutes, natural release 15 minutes.
Saute onion, green pepper, and celery in very large pot. Add beans and chicken broth or water. Heat on high heat until boiling. Add remaining ingredients except Cajun seasoning and rice. Reduce heat, and simmer 2-3 hours. Add chicken broth or water as needed to maintain level.
Serve over rice with Cajun seasoning to taste.
